Our first attempt at the vegan waffle with an egg replacer and had a hit! I’m thrilled. They came out great, the kids loved them, and really… I feel great afterwards. I don’t think I realized just how much dairy has been impacting me till starting to eliminate it in various ways in our lives. But I do recall in past waffle making adventures feeling like I had a lump in my stomach that was just not going to digest. This time around I don’t seem to be suffering from the same digestive challenges. And so it starts…. trying to be more diligent in avoiding it as much as possible. I don’t know that we will ever be 100% vegan as sometimes things just slip in where least expecting and not really looking nor paying much attention. But at the very least we can start a more mindful journey to healthier us. We all seem to be doing better and feeling better, so that’s what’s most important.
I’m off to make some veggie (cheesless) pizzas for dinner and we have FMN tonight! (Family Movie Night). I think I will expose them to BIG. Such a great Tom Hanks flick, I think they will really enjoy a good laugh.
